Sodium carboxymethyl cellulose is a carboxymethylated derivative of cellulose, belonging to anionic cellulose ether. The main chain structure is cellulose polymerized from glucose. The hydrogen of hydroxyl in each glucose monomer is replaced by carboxymethyl to obtain carboxymethyl cellulose. Due to the poor water solubility of carboxymethyl cellulose, sodium salt synthesized by the combination of carboxyl group and sodium ion is widely used. Sodium carboxymethyl cellulose, often shortened as CMC, it can also prepare with different viscosity and different degree of substitution according to the needs and uses.
Since CMC has a long chain structure and is easily soluble in water, its functions are reflected in thickening and emulsification stability, water retention, gel effect and film-forming. We have introduced them in detail in the previous articles. Generally, the emulsification performance is better within the range of 0.6-0.7 degree of substitution. With the increase of degree of substitution, other properties are also improved correspondingly. When the degree of substitution is higher than 0.8, the acid and salt resistance of CMC is significantly enhanced.
Thickening and emulsification stabilization effects play a great role in acidic milk drinks. These drinks generally contain a certain amount of oil and protein, which are easy to separate and float when stored, and the protein is easy to coagulate, affecting the quality and appearance of the product. Especially when the pH value is low, sodium carboxymethyl cellulose can solve these problems very well by dissolving in water in stable transparent colloid. On the one hand, it can stabilize the protein, and on the other hand, it can also make fat fully emulsified and avoid fat floating, so as to stabilize the whole beverage system and ensure quality.
